I’ve always been a big fan of veggie pies. Its super easy and the combination of roasted vegetables and the hard crust goes creates a nice texture <3. It’s the ideal recipe when you need to get rid of leftovers. For instance, before you leave for a trip and you don’t want to waste all thoose beautifull vegetables in your fridge or on a lazy sunday night yu can put all of them on a pie and you have your dinner.
Vegetable pies arefull of possibilites. Here in France we like to try differents crust and different orders in puting togerher the ingredients. There is for instance the “Tarte Tain” wich is basical an upside down pie…(see our inspirational board) Today we have a multicolored zucchini pie. We usdes the vegetables as well as the flowers of this plant. We tried to keep the ingredients as natural as possible but could’t help adding some our favorite homemade pesto. Since zucchinis have a tendancy to render a lot of water, I decided to roast them it in the oven before i finish the whole zucchini, pesto and feta pie.
For a the crust :
- 100g Salted butter
- 200g Flour
- 1 Egg
- 2 Tsp Flaxseed
- 1 Tsp Dry oregano
- 1 Tbsp Water
For the garnish :
- A handfull of green olives
- Homemade pesto (see the recipe)
- 4 Dried tomatoes
- 100g Feta cheese
- 4 Zucchini flowers
- 3 Yellow and green Zucchinis
Mix the flour and the butter. Make a hole in the center and add the egg and water.
Cover the dough with clingfilm and let it rest for half an hour.
During this time cut the zucchinis into slices.
Spread a little salt and oil over the zucchinis and let them roast in the oven for about 20 minutes on 150°C.
Add the oregano and the flaxseed to the dough and knead.
Using a rolling pin, push it down in order to obtain a 5mm thick pastry.
Place the dough in a pie pan and cover the surface with pesto.
Place the zucchinis on the crust.
Cruble the feta and the dried tomatoes and spread over the pie.
Place the pie in the oven and let it cook for 30 minutes on 180°C.
Take out the pie. Spread the olives all over and add the zucchini flowers in the middle. Let the pie cook for another 5 minutes.
