In modern western culture, dessert is the last dish served in a meal, typically composed of sweet foods: fruits, pastries, sorbets, cans, etc. They can be eaten with a fork or with a dessert spoon, an intermediate size between the teaspoon and the tablespoon. In a more ancient sense, dessert also included cheese.
In the banquets of the Middle Ages, dessert was a service that could consist of sweet dishes as well as savory dishes. He did not close the meal since it was followed by two other services: the table issue and the bottle.
The first desserts were made from honey and dried fruit. It was not until the Middle Ages, when sugar was manufactured, that people began to enjoy sweeter desserts, but they were so dear that they were reserved for the rich on special occasions. The first origins of frozen desserts, such as sorbet, date back to the Middle Ages, when kings demanded fresh ice flavored with honey or fruit syrup.
